This is fascinating question. Yet it’s very tough to answer because of multiple aspects this question touches.
First and foremost thing here is whether Mahabharata and Ramayana really happened?
The important thing -if we want to validate whether Mahabharata and Ramayana really happened - is archeological evidences.
In case of Mahabharata, archaeologists may have found sunken city of Dwaraka which may give boost to the fact that Mahabharata really happened.

The timeline of Mahabharata/Ramayana is volatile topic. Many different people come up with different timelines for Mahabharata. In case of Mahabharata western scholars believe it happened in 1200 BC while Indian scholars believe it happened in 3100 BC.
But If we go by Hindu calendar then Ramayana happened in Treta Yuga and Mahabharata in Dwapara Yuga.
It is believed that Mahabharata happened at the very end of Dwapara yuga and Kali yuga started with the death of lord Sri Krishna. So if we go by this timeline then Mahabharata war happened in 3138 BC. So what was happening in Europe at this time?

In Greek mythology, there was legendary island of Atlantis which sank abruptly. Similarly in Mahabharata we had island city of Dwaraka which sank after Lord Krishna left earth.
Many people equate Mahabharata with Homer’s Iliad.
In Mahabharata, king Kalyavan attacked city of Dwaraka with the army of 3 million yavanas. It is believed that Kalyavana was Greek king. (Yavana= Greek)
In Ramayana, wife of king Dashratha, queen Kaikeyi was from Kekaya kingdom, some people believe that Kekaya was modern day Ukraine.
So if we go by this logic then we can say that Mahabharata war and Ramayana war were world wars. And so as to answer your question, ‘What was happening in Europe during Mahabharata and Ramayana?’ (Based on off course above mentioned hypothesis) Europe or kingdoms in Europe were also involved in them.
But all these theories are hypothesis i.e. don’t have evidences, so if we really want to know what was happening in Europe during Mahabharata and Ramayana then we will need time machine.
